This is the absolute best recipe for salmon and quinoa!
I am obsessed with quinoa! If you have never heard of quinoa it is a superfood. A grain with lots of protein and fiber. I buy it at Costco for $8.49 for a four pound bag. Trader Joe’s sells quinoa very reasonably and in a smaller bag.
I love the fact that it is a healthier alternative to rice and can be cooked much faster than rice.
For every cup you want to cook double the water, bring to a boil on the stove, reduce to simmer, cover and cook for 15-25 minutes depending on how much you are cooking.
Southwestern Quinoa Salad
Quinoa Salad Recipe
* Cook 2 c quinoa I mixed regular and red quinoa
* Drain and rinse 1 can of black beans and 1 can of corn
* Dice 1 jalapeño
* Chop 1 medium red onion
* Chop 2 c of tomatoes or drain 1 can of diced tomatoes
* Chop 1 bell pepper
* Chop half a c of cilantro
Mix all ingredients in a large bowl.
In a small bowl mix the following, then pour over salad and mix thoroughly.
* 1/2 c olive oil
* 1/2 c red wine vinegar
* juice of 1 lime or half a lemon
* dash of cayenne pepper
* 1 tsp cumin
* 1 tbs of hot sauce, I use Tapatio
* salt and pepper to taste
I chop and mix all of the ingredients while the quinoa is cooking.
Grilled Salmon
Living in California, we BBQ year round. We have both gas and charcoal Weber BBQ’s. We use the gas grill and a fish basket when cooking salmon filets.
Grilled Salmon Recipe
*heat your grill on high for 5 min
*burners to medium-off-medium (MOM)
*spray fish basket with non-stick cooking spray (do this outside)
*drizzle olive oil on both sides of salmon and salt and pepper lightly
*place filets in fish basket and close
*grill salmon for 5 minutes then flip basket over and grill for an additional 5 minutes
Your salmon will be perfectly done!
Place each filet on a bed of the quinoa salad and top with avocado slices.
