When it comes to dinner, easy, healthy, and cheap are a must for this working mom. I use my slow cooker two to three times a week. A favorite in my family is Mexican style food, especially my slow cooker chicken tacos. I literally dump the ingredients in the slow cooker before I go to work, set it to low, and dinner is ready when I get home! Talk about fabulously frugal!
Slow Cooker Chicken Tacos
*3-4 boneless skinless chicken breasts (frozen or thawed)
*1 can of black beans drained and rinsed
*1 can of corn drained and rinsed
*1 jar of your favorite salsa (my family loves chile verde, 2 c of fresh salsa can be substituted)
I use a pair of tongs to shred the chicken when we are ready to eat. I often make this when entertaining and have the following garnishes for the tacos: avocado, diced onion, cilantro, feta cheese, shredded cheese, sour cream, diced tomatoes, and salsa.
This is always a crowd pleaser and will serve 4 adults. We had this for dinner tonight and my husband raved, “This is amazing,” after having seconds! My twenty-one month old son even loves it and asked for, “More please!”
